Lobster & Spinach Mac and Cheese


Ingredients (For 4 servings):

Instructions:

  • Prepare Pasta: Bring a large pot of salted water to a boil. Add the Fiber Gourmet Elbow Pasta and cook until al dente, about 8 minutes. Drain and set aside.
  • Cook Lobster: If using raw lobster or langostino bites, cook according to package directions. If already cooked, just set aside.
  • Sauté SpinachIn a large skillet over medium heat, warm the 100% MCT Oil. Add the fresh spinach and sauté until wilted, about 2-3 minutes. Season with salt, pepper, and optional garlic powder.
  • Make Cheese SauceReduce the heat to low. To the same skillet, add the almond milk and warm it. Gradually whisk in the Gouda and Parmesan cheese until melted and smooth.
  • Combine: Add the cooked lobster and pasta to the skillet and stir well to combine. Make sure the pasta is well coated with the cheese sauce and everything is heated through.
  • Serve: Divide the mac and cheese among four plates. If desired, sprinkle with a little extra grated Parmesan on top.
Notes:
Make sure to adjust the quantity of ingredients to match the caloric needs. For instance, if it comes out to more than 450 calories per serving after calculation, reduce the amount of cheese or pasta slightly.
The Fiber Gourmet Pasta is typically lower in calories than regular pasta, which should help you achieve the desired calorie count.
Using unsweetened almond milk or skim milk helps to keep the dish creamy without adding too many calories.
We've made this a lighter version of a classic mac and cheese, but you can always adjust ingredients to your taste!
