- 2 ripe avocados
- 2 cloves garlic
- Juice of 1 lemon
- 2 tbsp 100% MCT Oil or Coconut Oil
- Salt & pepper to taste
- Cherry tomatoes, halved
- Fresh basil or cilantro for garnish
Instructions:
- Cook the black bean pasta according to the package instructions, then drain.
- Blend avocados, garlic, lemon juice, MCT Oil, Ghee Butter or Coconut Oil, salt, and pepper until smooth.
- Toss the pasta in the avocado sauce.
