Black Bean Pasta with Creamy Avocado Sauce



  • Cook the black bean pasta according to the package instructions, then drain.
  • Blend avocados, garlic, lemon juice, MCT Oil, Ghee Butter or Coconut Oil, salt, and pepper until smooth.
  • Toss the pasta in the avocado sauce.
  • Serve topped with cherry tomatoes and fresh basil or cilantro.
