Ingredients:
- Explore Cuisine Mung Bean Pasta
- 1 cup fresh basil leaves
- 1/4 cup pine nuts or walnuts
- 2 cloves garlic
- 1/4 cup grated Parmesan
- 100% MCT Oil or Coconut Oil
- Sun-dried tomatoes
- Salt & pepper to taste
Instructions:
- For the pesto: Blend basil, nuts, garlic, and Parmesan. Drizzle in MCT Oil or Coconut Oil until smooth. Season with salt and pepper.
- Cook pasta, drain, and return to the pot.
- Stir in the pesto and add sun-dried tomatoes.
- Serve with extra Parmesan on top.
