Quinoa and Veggie Bowl

Ingredients:

  • Quinoa: 1 cup, cooked
  • Cherry tomatoes: 1 cup, halved
  • Cucumber: 1, chopped
  • Red bell pepper: 1, chopped
  • 100% MCT Oil or Coconut Oil : 1 tbsp
  • Lemon juice: 1 tbsp

Instructions: Mix ingredients together.
